Friday Favorites!!

It's Friday!! And...yesterday it was like 68º outside and perfect. It was a little rainy at first but cleared up later in the day. Mike and I even got to sit on the porch and have a beer!! #porchdick #walkingdead

The day was awesome. It's only supposed to get up to like 50º today though. I can't wait until the warm days actually happen in a row and not so sporadically. Although, I guess I can't complain. At least it wasn't snowing.

These Baked Southwestern Egg Rolls from Green Fashionista were posted on Tuesday's Recipe Swap this week. I think they look so good and super simple. I can't wait to try them out and see if they compare to the Buffalo Wild Wings version!!

I just came across this on Pinterest, but it's an older post from Love Grows Wild. I have to admit that I'm a little nervous about this one. She says that it's fairly easy and it doesn't have to be perfect, but I'm a slight perfectionist. Hopefully I'll get to it this weekend and have a post ready for you in the near future!!

I just finished Leaving Time by Jodi Picoult and it was amazing. As usual the ending is completely not what you expected. Here is the synopsis from Amazon in case you're interested. If you have never read Jodi Picoult before, you need to. She is amazing.

This "hello" decor was on sale for $8 on Eleventh Avenue (the new Groopdealz) today. I couldn't pass it up. I love having little sayings like this around my house. And, they are perfect for gallery walls!! I have no idea where I'm putting it yet, but....at least I own it now. haha. Plus, they come unfinished so i can add some color to spruce up a wall!!

#ThurstyThursday: Ruby Red Vodka Spritz

As I've mentioned like a thousand times before, this weekend was My Goober's birthday. Friday night we headed in to happy hour with a few of his friends and we found a new drink!! So, I figured I would share it with all you thursty people out there!!

Ever heard of Deep Eddy's? It's new to us but all the bars around here are starting to carry it. They've got specials using Deep Eddy's vodka and when our favorite bartender suggested this drink I have to admit we were skeptics. We're not grapefruit fans at all but he assured us we would like it. So glad we took him up on it!! And...it's only 2 ingredients!!

Sorry for such a horrible picture. A better one will come next time. Promise. :)

Ruby Red Vodka Spritz
• Deep Eddy's Ruby Red Vodka
 Sprite

Pour desired amount of Ruby Red Vodka. Fill the rest of your cup with Sprite. Enjoy!!

Recipe: Tie Dye Birthday Cake!!

My Mikey turned 31 on Friday!!! What an old little Goober. Well..if you don't consider that he's only 5 months older than me. :)

We had a few of his friends over on Friday night and to celebrate I made him a funky little cake. Luckily he worked on Thursday night so I got everything ready then and surprised him with it Friday morning. He asked about what kind of cake it was and all I said was that it was a white cake. No lie there!! He didn't need to know that I had spend an hour hours slaving over a hot stove in order to get this done for him. OK, so it was like super easy and took me no time at all....but it looked like I did. I was so happy with how it turned out and decided I would share this recipe with all you lovelies out there today!!

I originally saw this idea on Facebook, but ended up youtubing a few different videos to make sure I did it right. I'm so excited with how it turned out. I couldn't have asked for a better outcome.


Tie Dye Birthday Cake
Ingredients:
• 1 box white cake mix
• 3 eggs
• 1/4 cup oil
• 1 cup water
• food coloring in assorted colors
• non-stick spray

Preheat oven to 350º and spray cake pans with non-stick spray. Prepare cake mix according to box directions. Separate equally into bowls for however many colors you want. 



Add desired amount of food coloring in order to achieve the color you would like. Pour each color into ziplock baggie and lock squeezing out any excess air.


Cut small hole in corner of baggie and start to drizzle one color at a time into cake pan. Layer colors on top of each other and repeat until all cake mix has been drizzled into pan. Give cake pans a few short drops onto counter or shake softly to get out all air bubbles



Bake according to package instructions or until toothpick comes out clean when stuck in the middle. Let cool. Frost with desired frosting and VOILA!! Enjoy!!

Friday Favorites!!

First off, let me say Happy Birthday to my one and only....My Goober!! Mike turns 31 today. He's an old man now. Although I'm only a few months away. I made this totally awesome tie-dye cake for him, but we haven't cut into it yet so I can't show you. Shhh. Don't tell him. He doesn't know it's tie-dye in the middle. :) I'm such an amazing wife.

Thank God It's Friday...on the rizzle. I'm in dire need of the weekend. AND DRANKS!! Which brings me to my first favorite of the week!!

#ThurstyThursday: Georgia on my Mind

Happy #ThurstyThursday!!

I'm so ready for summer, aren't you?? Maybe not the "dog days" of summer, but certainly the warmer weather and more laid back atmosphere. I want to go have dinner on my patio and work in the garden. Maybe even sit in front of the firepit and have a few cocktails. Camping?!?! Yeah!! That's what I want. A good old camping trip. 

I just want to be outside. Period. 

But, until that day comes, I'll have to just turn the heat up and pretend like it's actually hot outside. We had a few warm days but the wind was blowing so damn hard you couldn't even sit outside. 

My cocktail this week has me dreaming of the beach. It's so pretty and peachy and I can only think of warm summer days maybe at a dock bar or sitting on a balcony at the ocean. And Georgians...this one's for you!


Georgia on my Mind
3 oz peach vodka
1 oz triple sec
4 oz orange juice
1 oz lemon lime soda
splash grenadine

Shake vodka, triple sec, orange juice, and grenadine in a shaker. Pour over ice. Add in grenadine and lemon lime soda. Enjoy!!

Recipe: Meat Lover's Flatbread

Happy St. Patrick's Day!!!

Mike and I found these awesome Naan flatbreads at our local grocery store. We usually use the ones you find by the pre-made pizza crusts but these were garlic flavored and looked sooo good so we couldn't pass them up.

We have been doing a ton of flatbreads lately. We've had a bunch of buffalo chicken ones and then a cheesesteak one and also a southwestern one with guac and corn and all that goodness. Our favorite pizza is meat lover's pizza so one night we decided to try out a meat lover's flatbread and it was absolutely amazing!! So...why not post it?!?!



Meat Lover's Flatbread
Ingredients:
Naan Flatbread
1/2 lb. hot italian sausage
pepperoni
3-5 ham slices or 1/2 ham steak
1/2 green pepper, sliced thin
1/4 red onion, sliced thin
1/2 jar pizza sauce
1 cup mozzarella cheese, shredded

Put pizza stone in oven and preheat to 425º. Spread pizza sauce over Naan flatbread. Add desired meats. I used the ones above. Add green peppers and onions. Sprinkle with cheese. Bake about 15 minutes or until pizza is crispy. If you do not have a pizza stone, just preheat a cookie sheet for a few minutes and put flatbread on that.

30 going on 75

I'm pretty sure I'm old as schmuck living in a 30 year old body. I literally have no desire to "go out" anymore. Now...don't get me wrong. I have the feeling to drink constantly, but I would so much rather have people over to my house or party in our neighborhood then actually make myself look presentable and go out.

Friday night, when Mike left at 5:30 to go to work, I went upstairs to my bedroom and laid in bed until I fell asleep at around 7:30. Yup...you read that correctly. By 7:30 on a friday night I was asleep. I tried to fight it, but it didn't work. I slept until about 11:30 when I finally got up, turned off the lights and got right back into bed. I had a drink on my nightstand. But that probably only added to my sleepyness.



And, as if that wasn't bad enough. By 8:30 on Saturday night, I was back upstairs in the exact same place just watching movies and hanging out with my iPad and my book.

What's wrong with me!?! I'm only 30 years old!! And...I'm not pregnant. Believe me, I've had that question a bunch of times lately.

I guess I'm just a loser.

I legit watch 3 movies this weekend. All while sitting in my bed at night waiting to fall asleep. What were they you ask?? Oh, sure. The To Do List (watch it!! It's about a virgin high school grad who makes a list of sexual things to do before college....hilarious), Blended (which I had to put on pause at one point because I was laughing so hard at a 50 First Dates reference. Watched it?? Know what I'm talking about??), and then Tammy (which I thought was a little overrated...shoot me).

Sunday was a little productive. I went across the street for oysters and clams. Have I mentioned how awesome my neighbors are?? We had a nice spread and got to hang out and actually get dressed for at least a few hours. And it's always a good time. So...maybe I'm like 50...not 75.



Oh well. I guess I'm content with not doing much. At least it means we save some money. Or are trying.

#ThurstyThursday: Cherry Lime-onade

I wanted to find a good St. Patrick's Day drink, but I came across this one and knew I had to try it out. I changed it up a little bit from the original recipe. And let me just tell you. Watch out now! This little devil will come up from behind and smack you right on your ASS!! You can't even taste the vodka....and it's so mother frakin good!!

Once again, this reminds me of late summer nights on the deck catching fireflies. Maybe it's because I can't wait for that. It's my favorite time of year, by far. I guess you could drink this whenever, but either way, nice cold delicious cocktails remind me of good friends and making bad decisions.


Cherry Lime-onade
3 shots cherry vodka
1 shot cherry juice (from jar of maraschino cherries)
1.5 shots limeade concentrate, thawed
1.5 shots lemonade concentrate, thawed
4-6 cherries, muddled
the rest Sprite

P.S. I can't figure out ounces or parts or any of that shit. I just kinda do it.
P.S.S. Keep in mind I made mine in a large mason jar

Add all ingredients together. Sip it!!! Cheers!!

Hashtag Humpday

It's finally starting to get warmer outside. Thank God!! Yesterday it was like 60º and we opened all the windows and sliding glass door so we could heat up the inside. Yup...you read that right, heat up the inside. It was colder in here then it was outside. Hey...I'll take it. No complaining here. #givemewarmweatherandcocktails #itstimeforporchdrankin



Saturday night I sprained my ankle. Yup. And....I was sober. We were hanging out at my friend's new house and got a phone call about 2 minutes after we left. He locked himself out. So, the two drunk men proceeded to pull out the ladder and try every second floor window he had. Unfortunately, the house is still a construction zone so there are tire tracks and holes everywhere. Also unfortunate that we had gotten about 10 inches of snow the day before, so those tracks and holes were covered in snow. My foot just happened to find one. So....now I'm a gimp. Who watched The Bachelorette finale?!?!?! Not this chick. I protest. Well, not really. Truth is I'm not hating on those of you who watch, but....I'm over it. Kinda like American Idol. Recipe: Copycat Chipotle Burrito Bowl

Last week while Mike was away at a conference I started getting really jealous about him eating out all the time. If I had enough money and I thought I could restrain from always getting the most unhealthy thing on the menu, I would eat out for every meal. So...when Mike eats out and I don't I hate it!!

I sat around for a while debating making the 20 minutes into town just to pick up some sushi. Then debated heading the 25 minutes in the other direction to get Chipotle. But truthfully, I really didn't feel like making either drive. So I sat and wallowed in my despair until I had an idea! I'll make my own Chipotle bowl!! So I searched through Pinterest and within minutes I was ready. I had planned on making a taco salad for dinner so I had most of the ingredients anyway, but I did have to head 3 minutes to our local grocery store for the second time that day in order to get the rest.

And, I'm not joking when I say...it tasted sooo much like a Chipotle bowl. Needless to say, it fulfilled my craving. The recipe is actually a bunch of different recipes put together based on what you like from the Chipotle menu, but this is how I make mine.

Copycat Chipotle Bowl

Cilantro Lime Rice
• 1 package white or brown boil in a bag rice
• 1 tbsp. cilantro, chopped
•1 tbsp. lime juice
• salt and pepper

Cook rice according to package. Add cilantro, lime, salt and pepper. Mix well.


Pico de gallo
• 6 vine ripe tomatoes
•1/2 red onion, chopped
• 1/3 cup fresh cilantro, chopped
• 2 jalapeños, chopped
• 1 tbsp fresh lime juice
• salt and pepper to taste

Add all ingredients into a large bowl. Mix well. Season to taste.

the rest
• 1 lb boneless skinless chicken, diced
• 1 packet reduced sodium taco seasoning
• 2 tbsp olive oil
• 1/2 green pepper, sliced
1/4 red onion, sliced
• 1 can black beans, drained
• 1 can corn, drained
shredded cheese
sour cream

In small saute pan, add 1 tbsp olive oil and peppers and onions. Saute until translucent. (like Chipotle's fajita) In large saute pan, add 1 tbsp olive oil and chicken. Cook over medium high heat until cooked through. prepare with taco seasoning according to taco packet directions. If the chicken creates a lot of liquid, you might want to drain it before adding taco seasoning. 

To make the bowl: Layer rice, fajita, chicken, corn, black beans, pico de gallo, cheese, sour cream. Enjoy!

#ThurstyThursday: Shocktop Twisted Pretzel Wheat

Shocktop is doing some 'ish lately, let me just tell you. I'm so in love with the Honeycrisp Apple Wheat and just saw they came out with a Spiced Banana Wheat. That will be in my mouth in a short matter of time, believe that. But just recently I tried the Twisted Pretzel Wheat and it sure is interesting.

You can take that with whatever you want. I tried it out with a few other people and there were mixed reviews. I, however, just happen to love it. I really don't have a lot of words for it other than "interesting". If you're someone who loves something salty with your beer, you will like this. You can definitely taste the pretzel in the aftertaste, and it's got a hint of salt, almost like you salted the rim.

Shocktop.com describes Twisted Pretzel Wheat by saying "This new beer delivers the delicious taste and aroma of bakery-fresh pretzels in a Belgian-style, unfiltered wheat ale." and that's pretty spot on. I can't wait to try this while eating actual soft pretzels with mustard. It would probably be perfect for a day at the ballpark!!

Recipe: {Skinnier} Quesadillas w/ ground turkey

Yup, you read that right. We used ground turkey. NO! Don't exit out! I promise you won't miss the ground beef. You truthfully can't even tell the different. I know, I know....I sound like eeeverybody else. But I'm serious. I wouldn't lie to you. I bet you can trick your men!!

I put this recipe into My Fitness Pal and it told me that each serving is 746 calories. And, I'd like to tell you that odds are you won't be able to eat a full one. Neither Mike nor I could finish ours. I ate half of mine and he could only finish 3/4 of his.

The best part about this recipe, besides the fact that it's a skinnier version, is that it's perfect for the week night. It takes no time at all and you can't go wrong with quesadillas. It's everyone's favorite.


{Skinnier} Quesadillas w/ ground turkey
Ingredients:
• 1 lb. 93% lean ground turkey
• 1 packet reduced sodium taco seasoning
water (for seasoning)
• 1/2 green pepper, thinly sliced
• 1/4 red onion, thinly sliced
2 tbsp cilantro, chopped
1 cup (reduced fat) cheddar cheese, shredded
4 large flour tortillas

Brown ground turkey in a skillet and prepare with taco seasoning according to packet. While turkey is browning, chop up peppers, onions, and cilantro. After turkey is browned and prepared with the taco seasoning, lay out tortilla and fill with chopped ingredients and cheese. Place on griddle or panini press. Place 2nd tortilla on top and, if using griddle, place another skillet or heavy pan on top to press it down. When bottom tortilla is crispy, carefully flip and cook again, until bottom tortilla is crispy. Slice into quarters and enjoy!
