Charlotte, I love you!!

If you follow me on Twitter or Instagram you know that Mike and I took a very short road trip this weekend. (if you don't follow me, you should!) The easiest way to explain this is that we are cheap. I have been looking for curtains for our house every night for a month now because I just can't wrap my head around the fact that one panel costs $25. Seriously?? We have like 1,000 windows. And I would make my own but it really isn't that much cheaper.

Anywhoo...So in the new house we have a "bonus room" and it has now turned into Mike's project. You may know that we watch a ton of tv and movies. So, the "bonus room" is now our home theater, or at least in the process of becoming a home theater. We're by no means rich, and home theaters are super expensive. So, we're ballin on a budget.

Mike, in his Craigslist searches for home theater seating, decided to check out the area around Charlotte, NC. We love Charlotte. I have to admit we have only been there once a few years ago, but it was love at first sight. Ever since the last time we went we have been trying to get back, so Mike thought it would be a great excuse.

He found these seats at an amazing steal, so Friday morning we headed on the road. After a few roadside adjustments and some energy drinks and Combos we were finally there!!
Our hotel room was freakin' AMAZEBALLS and right in the middle of Center City so we had a great night. We started out a little outside of Charlotte on this street full of bars. It was awesome. Unfortunately, my phone died so I only got one pic of this awesome outside bar. It reminded me a lot of Tap42, the bar we love in Fort Lauderdale.

After a few beers, we headed back to Charlotte and got ourselves lost walking around the city. Don't worry, I know jiu jitsu. Well, at least Mike does. We did, however, lose ourselves so much we found this awesome little alley filled with teeny tiny bars. So, we sat down and stayed a while.

One of the places had a Long Island for $5. So, we ordered. Ummmm, that blitch was still clear when she handed it to us. And I mean I like a strong drank, but, whoa!! We were such pusses, that after we sucked it down a little we went and had her add a little splash of coke. I know, I've failed as al alcoholic.

The best part, though, was that, all the sudden, these 3 bicyclists came in blaring "I got 99 problems but a bitch aint one" on their bikes. So, naturally I started singing. One of the guys looked at me and said, "There's about 100 more of us." And within seconds a hundred bicyclists rode their bikes into this tiny alley and started partying. It was insane!! I just kept looking at Mike and doing the "mind blown" face. I loved it!! And within about 20 minutes, they all rolled out. Turns out they do this bicycle bar hop every Sunday and Tuesday, and a huge one the last Friday of the month. How lucky were we?? Made me want to go get a bike and join!

Eventually we headed out too and got insanely lost on the way back to the hotel. lol. It was hilarious. Mike wanted to keep checking out other streets and finally we realized we were doomed. lol. Did I mention both of our phones were dead so we couldn't even figure it out that way. haha. We did find our way back though, and crawled into bed.

And then, the next morning, we woke up, got the chairs and headed the 8 hours back home.

Now go link up with Sami and tell me what you did this weekend!!

It's Thirsty Thursday!! - Pank Lemondrank

It's finally Thirsty Thursday!! Ugh...so ready for this.

Hopelessly Ever After

I actually started running again on Tuesday. That means that I don't have my daily beer as soon as I walk in the door from work. I have to wait until after my run. If you don't understand, let me explain...

I drink beer when I make dinner. Or when I sit there and watch Mike make dinner.
I drink beer when were eating dinner.
I drink beer when we clean up.
I drink beer when we sit down to watch tv.
Then, when Mike leaves, I drink beer when I write my blog posts.

Now, my night consists of...
No drink when dinner is made.
Milk for dinner.
No drinks during tv.
Run.
Beeeeeeeerrrr!! Or in last night's case, alcohol! during my blog post.
Bed.

I know, it's boring now. But, I'm hoping to lose some weight again because I had a kid call me out yesterday. Yup...little bugger. Almost punt kicked him across the classroom. I was talking about my earbuds when i run and how they fall out of my ears. He said "You run??" "Yup." "But, if you ran a lot, shouldn't you be......" "Shouldn't I be what?!?!?!?!?"

Oh yeah. Another kid in the class gasped. He knew. And he quietly told the other kid, "You can't say that to a girl."

ANYWHOOOOOOOO...

Tattoo Talk

button

So I have to admit...I only have one tattoo. But...I have my entire body planned out. haha. My husband, on the other hand, has both ribs and both sleeves. We grew up in completely different households. I am the only one in my family who even considered a tattoo. My family is very conservative. I, however, am not. lol. My gauged eared, nose pierced, tattoo loving self is the odd ball of the family.

Mike and I actually go to our tattoo artist in 2 weeks for him to get his sleeve finished and me to get tattoo #2. Our artist is amazing. Google BJ Betts and you will see why. You can also follow him on Instagram to check out his latest work!!

My only current tattoo is on my foot. I thought long and hard for something to honor my father, even though he would totally disapprove of me getting a tattoo, and finally ended up with this.

Don't mind my huge ugly feet...lol. I was a dancer for 15 years. And this filter looks horrible. lol.

"Faith" is a word that meant a lot to me throughout my dad's struggle. When he first got sick, I bought him a Build-A-Bear and named her Faith. Faith came and lived with us in Minnesota during the time that dad was going through treatment and she laid in dad's casket at his funeral. Throughout all of our ordeals, we always had "Faith".

Now, Faith protects my family and I and watches over us from her lofty place on our bed. :)

I always knew I wanted to get something that involved the word"faith", and one day I came across this verse from the Bible. "Walk by faith, not by sight." It is quite a common quote and for some reason only resonated with me throughout this process of deciding how to honor my dad. And...although it's meant for a little different context...it helps me remember that dad's there to walk with me through all facets of my life.

Don't forget to stop by and link up with me on Thursday for our Thirsty Thursday linkup!!

Weekend Shenanananies!!

Another pretty eventful weekend!! Well...kinda. lol.

My mom took me as her date to the wedding of one of her former coworkers. I've known Heather since I was in middle school and she is truly one of the sweetest and most genuine women I have ever met. I'm so happy she finally found someone who will love and cherish both her and her daughters. Momma even got up in front of all those people just to tell Heather how much she adores her. I was so proud. :)

Saturday night I had been invited to a neighborhood bonfire. Our new neighbors wanted to get everyone together so we could all meet and hang out. Such a cool idea. Unfortunately, it was raining it's ass off so the bonfire was cancelled. But we did all hang out til all hours. I have to admit. Having so many people around was one thing we were both so nervous about. We've always liked our space and privacy. But...our neighbors and the camaraderie between them has now turned into the thing that we really like the most. There's always someone to hang out with and always someone there to watch out for you.

Sunday Mikey and I actually got some work done around the house. We no longer have a ton of boxes all in our front room and dining room. We cleaned all that up and got the front room together. Even got the entryway looking like someone lives there. I'm not spending too much time decorating at the moment because Halloween is my favorite holiday and I love to do it up!! I'll be sure to show you the decorations when I get done. :) But here is a little sneaky peak a few of the rooms in the house.

That's all for today folks!! Don't forget to start thinking about your Thirsty Thursday post for this week!!

Thirsty Thursday - Slacker Edition

Yep. I'm a slacker. I didn't make a drink this week. But...I will provide you with the viewing pleasure and recipe of the drink I was going to try!! Sorry guys, this week kind of got in my way and I slacked a little. Again. That, and I'm kind of trying to save some money, so I was stuck with what was in my freezer this week. But...I'm saving up for next week. :)

Oh and no cohost again this week. Don't forget, if you're interested I'd love to have you. Just email me at hopelessly_ever_after@yahoo.com. I don't charge you anything and I make it super easy. So, if you're worried it will be hard, it won't!! twss

Anywhoo...this was the drink I found and I thought it looked hawesome!!

I tried to do something similar to this a while back and called it a Slutty Temple. This is the actual drink that I got the idea from. I pinned it three times onto my Sip, Sip, Slurp board on Pinterest, so I must have thought it looked good. I'll definitely be trying it this weekend.

Dirty Shirley

INGREDIENTS:
1 oz. cherry vodka
5 - 6 oz. Sprite
a splash of grenadine

I used to get Shirley Temple's every time I went out to dinner with my parents. I absolutely love the taste of them and sometimes mix in some maraschino cherry juice into my ginger ale just to get that flavor. Hopefully this is just as good!!

OK It's your turn!! All you have to do is write a quick post about beer, wine, or a cocktail and come back to link it up!! I love to hear your suggestions!!

Taste of Tuesday - Tortellini Bake

I'm back for Taste of Tuesday!! If you haven't checked it out you have to. Blissfully Miller and Let's Get Bananas do a Taste of Tuesday linkup every week. There are so many great ideas and everything looks soooo gooooddd!!

So I promised in this post that I would be doing a recipe on the blog. I wasn't sure at the time what I would be doing, but I came across this on one of my Pinterest boards and thought it sounded fantastic!! So, I changed it!

lol. Only a little this time. And only because I was trying to make it a little healthier and I couldn't find all of the ingredients that they asked for at my local Walmart. You can find the original recipe here!

But it turned out pretty good!! I have a few suggestions, which I'll write at the end so be sure to check those out before you decide to make it for yourself. And you should definitely make it for yourself. Along with a drank to link up for this week's Thirsty Thursday!! Don't forget to come back and link up on Thursday!!

Spinach and Cheese Tortellini Bake

INGREDIENTS:
1 pkg. Barilla three cheese tortellini (in the dry pasta aisle)
5 slices of turkey bacon
1 tbsp. butter
3 cloves garlic, finely minced
2 tbs. flour
2 cups milk
¾ tsp. kosher salt
⅛ tsp. black pepper
1 1/2 tsp. dry basil
¼ tsp red pepper flakes
zest from 1 lemon
2 cups baby spinach, roughly chopped
1 1/2 cups shredded cheese italian blend

DIRECTIONS:
Preheat oven to 350 degrees. Fill a large pot with water and bring to a boil. Cook tortellini according to package directions.

Cook turkey bacon in medium sized skillet until crisp. Remove from pan and place on paper towel. Add garlic and butter. When butter is melted and garlic is tender add flour. Stir with whisk for about a minute. Slowly add milk and whisk until smooth. Add salt, pepper, basil, and red pepper flakes. Zest lemon into sauce. Keep stirring until thick and then remove from heat.

Drain tortellini and then put back in pot. Add bacon reserving a little for the garnish. Add spinach and cheese, and then sauce. Stir to combine.

Place mixture in 8x8 in casserole dish and top with remaining bacon and some more cheese.

Cover dish with foil and bake for 20 minutes. Remove foil and bake an additional 5-10 minutes. Let sit a few minutes before serving.

*OK so now for my recommendations.*
- Make more sauce. I don't know exactly how you do that. More butter, more flour, and a little more milk? But..it was a little dry-ish. I would like it a little creamier.
- Try to get the spinach and cheese tortellini if you can find it. It was almost too cheesy tasting.
- Add more bacon!! BACON!! If you use regular bacon keep the drippings and don't add butter. It will probably taste better with regular bacon, too.

Weekend Shenannies!!

This weekend was pretty eventful compared to previous weekends.

Since now Mike and I only live about 20 minutes away from Dover, it's so easy to "slip" over there and pick up a few things when we need to. Of course our intention of spending 2 hours there turned into more like 4 hours. But we got some new stuff for the house like these frames for some Maryland pics my mom gave me for my birthday.

Then, my sister-in-laws sister (think about it......) got married on Saturday. Everything was gorgeous and we had a great time. There was a cash bar so we had to bring in reinforcements just in case, but luckily the place where it was held was pretty cheap anyway so we ended up just drinking mostly there. My nephew is the cutest thing in the world but incredibly shy. When they introduced him as the ring bearer he walked in all cool and then realized there were a ton of people there clapping for him. So...he turned around and struck a pose until Grandma came and got him. lol. But it was too cute.

The bride and groom looked great and were the life of the party. My brother and sister-in-law have been dating since I was 14 and Stacey (the sister) has been around since she was very little. It's been so cool watching her grow from a tomboy to this beautiful woman and now married to her love. I couldn't be happier for them.

On Sunday Mike and I had my family over to watch the game in the new house. It was the first time my Aunt, brother, and sis-in-law (another set) had seen it. I loved showing it to them and hearing how much they loved it. Such a cool experience. I, however, do not have any pics from yesterday because in my hungover stupor I just didn't give a shit. lol.

BUT!! I did go to Dunkin this morning and get my free coffee since the Ravens won!! And...on that coffee was something even better!!

Looks like I'll be getting myself some fresh Ravens gear!! WHOOP WHOOP!! Go BIRDS!!

A Thirsty Thursday Confession...

It's my favorite day of the week!!!
  THIRSTY THURSDAY!!!
Hopelessly Ever After

Please say hello to my cohost this week!! Her name is Maddie and she is awesome!! She links up with me all the time and with not just one blog...both her blogs!! She's the best. You can find her blogging at The Thankful Tummy and The Whimsy One. I will warn you, however, please eat before you visit the blog because if you don't you'll be craving delicious food!! I can't wait to see what she has chosen this week for us to be drankin on!!

So this week I have somewhat of a confession. I had a drink all planned out but completely forgot that today was Wednesday and definitely didn't feel like going out at 8:45pm to go get the stuff. So...I was going to fib it.

I know, I know...I'm sorry. I promise you I've never done it before. I always make the dranks I post for Thirsty Thursday, but I was desperate.

However, in the meantime, I actually managed to come up with a drank that really tastes quite delicious!! And actually looks exactly like the drink I was trying to fib. haha.

So, in light of my recent confession I call this...

Little White Lies

INGREDIENTS:
2 oz. Blue Raspberry UV Vodka
4 oz. lemonade
garnish with lemon

That's it and please believe this 'ish is delish!!

Now, go tell me about your new cocktail, beer, or wine!!

More Liebster Shoutouts!!

Last week I had two fabulous bloggers nominate me for the Liebster Award!! I love hearing that I actually appeal to my fans readers and that they like to read my stuff!!

So, since I have been nominated before and already nominated other blogs, I always like to at least answer their questions and give a quick shoutout to these fabulous ladies!!

My first email was from Brit over at Wine, Cheese, and Workout Capris. You may not know, but Brit was once my fabulous cohost during Thirsty Thursday!! She did a Spiked Lemonade that looked AMAZEBALLS!! Go check it out!! And link up for Thirsty Thursday!! (Insert shameless linkup plug here.)

Here were the questions Brit had for me!!

1. What is your favorite book? These questions are so hard. I honestly don't have a favorite book. I love Jodi Picoult books and have read every book by Nicholas Sparks.

2. Why did you start blogging? When I first got addicted to Pinterest I loved going to people's blog in order to see how to do all the DIY stuff and recipes and all that. It kind of intrigued me to start something where people could go to my blog and see the same. I've since moved away from all the recipes and DIY that I used to blog about, but am happy with where the blog is now.

3. Who inspires you the most? I wouldn't really say I have someone who inspires me. I would say it's more of a drive to ensure that I'm happy in whatever I'm doing in life.

4. Any advice for new bloggers? Ha, oh Lord. I'm a new blogger myself so I think I'm the one that needs the advice!!

5. What do you like to do in your free time? That's easy...drink! Thirsty Thursday...hello??

6. Do you have a favorite workout? Hmm...does the steps it takes to get to the fridge count as working out? Because that's about all I've done lately.

7. What is your greatest achievement so far? Ha. Not getting fired. I'm definitely the kind of person who speaks my mind and stands up for my students. It's gotten me into a lot of trouble in the past and I actually left one county because of the disagreements I had with the "higher ups". In my opinion, you can run out of breath talking about all the programs in the world that are going to "better" your students.  But what you students really need is someone they can look up to and trust. That's the real motivation for learning. Well, at least in my opinion.

8. What is your favorite movie? Another favorites question....no idea. lol. Sorry.

9. What is one of your goals for the future? To look like this...although that would require 300 cc's of silicone and someone to remove their junk from my trunk....

10. If you could visit any place in the world, where would you go? Africa. I mean I would love to visit Italy and France and all that, but I know I will get there eventually. Africa is a goal a little harder to attain. Plus, I love zebras.

11. What is your favorite tv show? Just one? Well we're currently in the season for Hell on Wheels, Boardwalk Empire, Ray Donovan, Catfish, Teen Mom, Ink Masters, Dexter, Top Gear, and Sons of Anarchy starts tonight. But throughout the rest of the year...Next Food Network Star, Game of Thrones, The Ultimate Fighter, True Blood, Homeland, Walking Dead, Vikings, Falling Skies, Spartacus, The Americans, Intervention, Scared Straight, Eastbound and Down, Californication, Real Housewives (duh), Anything on Food network or HGTV...is that good??

------------------------------------------------------------------------------------------------------

Then, to my surprise, Katie at He Calls Me Grace also sent me an email nominating me! I feel so loved!!

So I promise Katie I would also answer her questions and give her blog a shoutout!! Go check her out!! She's awesome!! Thanks Katie!!

Here are Katie's questions...

1. What is the first thing you do when you get on your computer each day? (Check email, social media, etc.) Check Facebook. It's sad. But true. Here's my routine when I wake up. I walk down the hallway to the bathroom and sit on the toilet. Now before we all get grossed out, I don't do Number 2 well you know...unless I have to...I just sit there. I check Facebook, Twitter, maybe play a few games of Candy Crush, then I get up and start my day. :) I know, I know...it's weird. I don't know how it started, but it's routine now.

2. Do your friends and family read your blog? If so, how long after you started did you tell them about it? Ha!! Umm, no. Actually, I ask them to read my blog but they still don't. lol. I'm not ashamed or embarrassed about my blog at all. It's just my way of feeling like someone is listening and I get to say whatever I want!!
My mother hates that I curse sometimes on my blog so I'd actually prefer her not to read it, I guess. She once yelled at me for posting a Facebook status that used the word "freakin". I was 28 years old. Nuff Said...

3. What is your favorite season and why? I love Autumn. Something about that weather where it's breezy but still a little warm. I love it. Oh and there's pumpkin beer, too!! YUM!!

4. What is your dream job? (If money was no issue.) If I thought I could actually make a living with it in my hometown I would love to be an Interior Designer. I would love to go to school and get to try out all those things in other people's houses. I think it would be awesome!!

5. What book are you currently reading (or read last)? Do you recommend it? Well, I'm actually in a book Club and we met last night so...I just got done trying to finish The Cuckoo's Calling. I couldn't get through it. Not like it was bad it just took forever to read!! Only 2 members of the Book Club actually finished it. However....they said it got really good towards the end so don't pass it by because of me!!

And, we just chose Me Before You by Jojo Moyes to read for this month so I haven't started it but I'll let you know.

6. If you won the lottery, would you (and your husband/boyfriend if you have one) quit your day job? Oh hail no! I need us both to work so we can get away from each other. lol. You see, we have the perfect setup. He works nights and I work days. Yeah it sucks sometimes, but...it works.

7. What is something that is currently on your wish list? A nap.

8. If you had nothing to do tomorrow, what would be your ideal day to yourself? Shopping. Well, if I had a ton of gift cards. lol. I love shopping for things for the house and clothes. I could do it all day every day. But only if I get to keep the stuff.
You ever have those dreams where you shop and buy all those cute clothes, and then you wake up and realize you really don't have them. I call those nightmares.

9. Tell me something cool about the city that you live in. Where would you take me if I were to visit? Umm...eerrr...hhmmm... we have crabs? So...crabbing? It's a very small town.

10. Will you follow me? Thanks! Haha. Already do love!!

It's Thirsty Thursday!!

YUM YUM IN MY TUM TUM!! It's Thirsty Thursday!!!

This week it is my privilege to introduce you to my cohost Jessica!! Jessica blogs over at Blissfully Miller. Please do me and yourself a favor and head over there to check out her food stuffs. She does a linkup called Taste of Tuesday. And all I can say is YUM!! (Excuse me while I wipe the drool from my mouth.) You've got to check out her house, too!! You may not know but I love me some DIY and she has done some super simple but beautiful accents to her home. Go stop by and check her out!! Oh and...she's a wine dranker, too. :))))

Well, the weather is getting cooler!! It's so funny. When it's winter I'm a bitch because I want it to be summer. But, when it's summer, I'm a bitch because it's too hot. haha. My poor husband. Not really...

Truthfully, my favorite weather is that time between September and November. I looooove October. You still have those warm days, but you can break out the cute cardigans for the evening. It's awesome weather for camping!! You have warm days where you can still sit outside and not freeze, but you get to light that firepit and cuddle with your snugglebug boy toy in the tent. My favorite. P.S. We better freakin go this year!!

I'm not just rambling...I promise. I have a point here...

Another reason I love the fall is because....
FREAKIN AWESOME BEERS!!!

I love pumpkin beer, so I love to try new kinds of pumpkin beer. In the past I've gone to the good ole' goto Sams Octoberfest. I truthfully thought I would never find anything better. Until Mike brought home this...

SHIPYARD PUMPKINHEAD

OH MY GOODNEEESS!!! (Say it like Sheneneh from Martin)

This beer is delish!! It's lighter than most pumpkin beers. The thing I disliked most about Sam's Octoberfest is that it hits you in your throat. You can't drink a lot of them because they are heavy.

Not Pumpkinhead. Sooo good. And the best part...the CINNAMON!! You can actually taste straight cinnamon!! And you best believe you can drank these alllllll niiiiggghhhttt looooonnnnggg!!

It might have happened last night. :)

So go get you some!! Pumpkinhead that is. *wink, wink*

Now go lank that drank!!

And don't forget!! I need cohosts so if your summer is winding down and you have some free time. Let me know. I try to make it super easy!!
