Recipe: Kickin' Grilled Shrimp

I posted this recipe on Fittin' It In last week, but truth is I'm kinda done with that blog. haha. Maybe this summer when I get back in the gym. Anywhooooo, just thought you guys would enjoy it, so I thought I would post it on here, too!!

This recipe actually originated with Skinnytaste.com so you may have seen this on my Pinterest board for Skinny Meals. I have been eyeing it up for a while now and finally convinced Mike to buy some shrimp. He's not a huge seafood eater so I hardly ever get to have fish or shrimp and I was stoked when he said ok.

As usual, I changed the recipe around just a little to fit our palate, but this is soooo delicious you have to try it!!

Kickin' Grilled Shrimp

INGREDIENTS:
2 tbps. light mayo
2 tbsp. sweet Thai chili sauce
2 tbsp green onion, chopped fine
sriracha to taste
1 lb. large raw shrimp, deveined and shelled

DIRECTIONS:
Preheat your grill. Combine mayo, chili sauce, sriracha, and green onions. We did these on skewers, so if you're using wooden skewers soak in some water. You won't have to do this if you have metal ones. Lightly oil your grill and add shrimp. brush on some of the mayo mixture. Cook about 6 minutes or until light pink. Turn to other side and repeat. Pull shrimp off the grill and brush on more mixture. Serve and enjoy!!!

5 ways to sneak alcohol into the movie theater...



Mike and I are always looking for new ways to sneak alcohol into the movie theater. Most times we just hit up the bar before going, but then you start to wind down during the movie and that's never fun. So....we came up with a list of ways to sneak it in this weekend to be prepared for X-Men.

1. Vodka soaked gummy bears -  This is a great recipe from My Thirty Spot using Smirnoff which you know I would marry if it was legal. Forget Mike, Smirnoff if always there for me when I need him.

2. Wine pouches - I love these things!! They are so small and can fit right into your purse. Our movie theaters are not that crazy over big purses, thank God, because otherwise we would be totally bored during the movie.

3. Good ole' Flask - That's right....fits right into a cargo pocket or your purse. Just get a large soda, which usually has free refills and leave some room at the top for your liquor of choice!!

4. Minis!! - Minis work great, too because you can have a variety of liquors and don't really have to count out shots. Just dump a whole mini in and call it a drunken date night!! They even have them in wine, too!! Or, be adventurous and just buy a pint....

5. To-go Shots - Venus Trapped in Mars introduced me to these a while back during one of my Thirsty Thursday linkups. You can find them at any liquor store and throw them in your purse for the movies.

Recipe: BBQ Chicken Pizza

OMG, so this was soooooo good. Mike and I make BBQ chicken pizza a lot but this time I wanted to spice it up. I even had someone ask me if I had leftovers from Ledo's for lunch. Booyah!! One for me!

BBQ Chicken Pizza

INGREDIENTS:
1 can refrigerated pizza crust
1 lb boneless skinless chicken breast, grilled and diced
1/2 green pepper, sliced
1/2 red onion, sliced
2 tbsp green onions, chopped
2 roma tomatoes, diced
2 tbsp cilantro, chopped
1/2 cup BBQ sauce
1/2 cup shredded colby jack cheese
1 cup shredded mozzarella

DIRECTIONS:
Preheat oven to 425ยบ. Prebake the crust for about 8 minutes or so, depending on how crispy you like your pizza. Top crust with BBQ sauce and then sprinkle on chicken. (We grilled our chicken with a little BBQ sauce, too) Cover with colby jack cheese. Top with red onion and green peppers. Reserve a few to sprinkle on at the end. Top with mozzarella cheese. Sprinkle green onions, tomatoes, and reserved peppers and onions. Bake for 15 minutes or until crust is golden and crispy. Before cutting, sprinkle on the cilantro. Then, ENJOY!!!

P.S. The cilantro really adds another awesome depth of flavor.

Weekend Recap

First off, sorry I've been missing a little. Everything with Boost has really affected us and we've been kind of trying to keep busy lately. Truth is, I'm starting this on Saturday morning and it's really wierd without him sitting here keeping me company. He was my always here by my side whenever I blogged and it feels so empty without him. We'll miss you doodoo.


Friday night was a typical night in the village. Party across the street. Truthfully it didn't last that long, which was ok with me because I have been super exhausted lately. I haven't been sleeping well so my neighbor gave me some of her Melatonin and it's definitely helping. Hopefully I'll be feeling better soon.

Saturday morning I woke up and messed around with my Influenster account. That's right, I signed up for Influenster!!! Jess over at The Girl Who Thought Too Much was talking about Influenster in her post last week and convinced me to join. Seems a lot like BzzAgent which I'm already a member of, so...why not try it. My social networks won't connect, however. Any clue what I can do to change that? It was connected to my Instagram but something came up to tell me to reconnect and when I did, now it won't connect. Tryin' a get them points so I can get some shit to try!!

Saturday night was very chill. the neighbors and I went to another neighbors and they had a bonfire and little home fireworks. Very laid back and perfect for a chilly spring evening. He makes hommade moonshine and he sent me home with a jar of my favorite kind. Peach cinnamon. YUM!!!


Sunday was a date day for Mike and I. We went to see X-Men and then went out to sushi. We stopped in to Ram's Head Tavern for a drink since we were a little early. The sushi place doesn't open until 5. But then we sat outside by the water and had some amazing sushi. I love that place and it's always BOGO so how can you beat that?? We got 4 rolls and a Kobe burger for $30.

Saying goodbye is the hardest thing to do...

Last week I told you a little about what was happening with my kitty, Boost. Wednesday morning we realized he was acting a little funny and took him into the vet Thursday morning. We were told he had a clogged urethra, but they had gotten a catheter in and he was looking better already. The vet said we would get a call Friday morning when he got in and if things were looking good he might be able to come home early. We were so relieved that he was doing better, and when Mike got the call Friday he was hoping we could go pick him up. Unfortunately, that wasn't the call we received...

Apparently, another crystal had gotten stuck in the catheter and clogged Boost's urethra again. I don't know when they found it, or if it happened overnight, or what, but unfortunately, he didn't make it. Poor Mike had to take the call all on his own, and then call me here at school to tell me. And...since we already had quota for teacher's gone for that day, I had to stay and teach the rest of the day. It was the longest Friday of my life...

Truth be told, it was the longest weekend of my life. Needless to say, it wasn't the holiday weekend I had been expecting. Mike and I spent the better part of Friday night crying together. And Saturday, when we came home from our day out, Boost wasn't at the door to greet us. We both felt the emptiness and cried together again.

You see for some people animals are just animals. But to us, they are our family. Boost was my little buddy. He followed me around everywhere, greeted me when I walked in the door, kept me company while I was getting ready, and slept by my side every night. Not to mention he was the most beautiful cat I've ever seen in my life. 

The emptiness is overly present in our house. It's just not the same without him running around at our feet. 

I'm gonna miss my boy...

5 on Friday!!

- It's a 3 day weekend for me!!! I love Memorial Day weekend. It kind of signifies the end of school, although we still have 3 more weeks this year....and always gives people an excuse to get together and celebrate. Thank you to all those men and women out there who have or are defending my freedom every day!! Especially props to my bestie Billi who's currently deployed on the USS Mesa Verde!!


- I drove through a tornado yesterday!!! It was the scariest and most exhilarating thing I have ever done in my life. And I wanna do it again!! Truth is it was very small and I didn't even know I was doing it. I mean I was on the phone with Mike and he kept saying, it's just a bad thunderstorm....and I was like "sh*t is poppin off....I'm pretty sure the trash cans flying in the air and circulating winds and rain indicate something other than just a thunderstorm." I posted a message on Facebook about it just joking around, until people started commenting that I really did drive through a tornado and posted pictures of the rotating clouds. SCARY!!! FREAKIN AWESOME!! Thank God we didn't have any damage.


- I got some awesome new workout song ideas from Candra and her commenters this week. If you're looking for songs to pump you up during your run or workout check out her page. Great suggestions and some oldies I completely forgot about.

- From what we hear Boost is doing better. If you didn't read yesterday's post, my cat was super sick and we had no idea what was wrong. He had a clogged urethra and Doc says it's a good thing we didn't wait much longer. Apparently it's super life-threatening and Boost was in pretty bad shape when we got him there. I swear he had only been acting silly for maybe a day....we're not bad pet owners. As soon as we noticed we took him in, but they say it happens very quickly. Doc was able to get the catheter in and clean him out so we're waiting to hear more today. My poor baby. I missed not having him with me last night and this morning.


- It's Friday!!! I know that's a cheater, but this has been the longest week of my life. Between everything going on with Boost and the tornado yesterday and school......oh lord, school....it's taken forever for Friday to get here. Put your dranks up, it's a long weekend!!!

It's just as hard to be a mom...to a pet...

I know, I know...it's a little different than "real" kids, but...it's still hard. Most of you know I have a gorgeous dog and cat. They are beautiful, both of them, and they match every single room in my house. lol. OK, so that doesn't really matter but....yes it does...

A few weeks ago Rosco was having some "trots" issues. He had soft serve ice cream poop for about a week and we finally switched his food and it got a little better. Then started back up again. He has since been a lot better but it was an ordeal. You could tell he felt fine wagging his tail and jumping around acting like an idiot as usual, but not having him be able to tell us what's wrong sucked.


Now, it's Boost. No idea what's up with him, but I'm really scared it's something serious. Boost is the most playful cat on the planet. He's quite lazy, but can't let you walk past him without going after your feet. Every morning he gets ready with me and plays in the shower while I do my makeup and hair. And every evening he sleeps by my feet, and sometimes on my back or head...


Tuesday night was not like that at all. I realized he was missing when I was laying in bed. I called and called and he never came. Then, I remembered I had shut the closet door and when I opened it there he was laying there. He hadn't whined to get out or scratched or cried. Just laid there. And he never came to lay in my bed. My first indication...


Then, yesterday morning when I got ready for work I realized he wasn't there. Not on the counter playing with my things while I was trying to do my makeup, not in the shower trying to catch the water droplets, and not scratching my feet every time I walked by him. When Rosco and I headed downstairs there he was my the door to his room laying on the floor. He didn't move when Rosco ran by.....my second indication.


Then, I went to give him food. He didn't cry for it like he normally does, he didn't scratch the door, as a matter of fact I had to move him to even open it. He walked in and stared at the dish. Then laid down. When I poured the water in his bowl he came over to drink it, but instead just sat there with his chin halfway in the water and eyes closed. My third indication. 


And then I really looked at him. He looked terrible. He could barely open his eyes and when he stood up to walk he was falling all over the place on shaky legs. My poor boy. I immediately called Mike, who of course couldn't talk, and told him to call me ASAP. He vowed to watch him while he was home but figured it was nothing. Boys.....


We still don't know what's wrong. He looks horrible and even lets you rub on his belly because he doesn't have the energy to attack you.We're headed to the vet this morning. I'm super concerned and am dreading the phone call from our vet. My fingers are crossed that it's something easy. But I want my old Boostie back....

*Update: The doc called Mike. He has a clogged urethra. Doc is going to try to get a catheter in and if he can things will be fine. But...he said he's pretty bad off. He has to stay at the doctor until Tuesday. :( Please think about him and send positive thoughts. Til then, momma is going to go wallow in despair. *
