Recipe: Chicken Cordon Bleu Casserole

Mike loves chicken Cordon Bleu. So, when I came across this recipe on SkinnyMom I knew I had to try it out. I've always tried to replicate his mom's chicken Cordon Bleu but hers is clearly always better. The recipe didn't look too hard and the ingredients are all pretty much things that you should have on hand anyway. I knew I had to have a couple sides to go with it though because it didn't seem like something I could have on its own. So we threw in some Rice-A-Roni and green beans and called it a night.

Mike didn't actually like it as much as I thought he would, surprise surprise, however it was good enough for him to get seconds, so that's a small win. I really think his problem was with the consistency because the breadcrumbs mixed with the sauce made parts of it seem a little mushy and he hates mushy.I personally thought it was pretty good and super easy for a weeknight meal. Perfect for a family with kids that are ready to eat, because it makes a ton.

Chicken Cordon Bleu Casserole

INGREDIENTS:
1 lb. chicken, cooked and shredded
about 10 slices of ham
about 10 slices of swiss
1 cup Italian seasoned bread crumbs

for the sauce:
4 Tbsp butter
4 Tbsp flour
3 cups skim milk
2 Tbsp lemon juice
1½ Tbsp Dijon mustard
½ tsp paprika
¼ tsp black pepper

DIRECTIONS:

Preheat oven to 350ยบ and coat 9x13 baking pan with non stick spray. Line bottom of dish with cooked and shredded chicken. Layer ham on top. Layer cheese on top of that.

Make sauce: melt butter over medium heat and whisk in the flour until smooth. Add milk and continue to whisk until it thickens. This will take about 10 minutes of continuous whisking. Add lemon juice, dijon, paprika, and pepper. Continue whisking while bringing sauce to low simmer until it reaches desired thickness. Pour mixture evenly onto casserole. (It might not need the whole thing.)

Top with breadcrumbs and lightly spray the top of the casserole with a little nonstick spray. Bake for about 35 minutes or until bubbly.

It's Friday Betchezzz!!

ONE
I wrote a blog post yesterday!!! I know, I know. Silly favorite, but...it's been so long!! Check it out! It has Channing Tatums butt in it!

TWO
I closed my Scentsy order out and got to order so. much. stuff!! I legit sat on my neighbors floor for about an hour and a half debating how I could get the most. Plus, I booked 4 parties off of mine, so....now I get 4 more half price items at their parties. Awesome! It's so cool and I can't wait to get all my scents. Maybe I'll do a blog of my haul!! I spent a total of $63 and probably got about $300 worth of stuff if not more. Soooooo worth it.

THREE
I have a student at school who calls me "The Pretty Lady". I love her. Who cares if she calls like 4 other people "The Pretty Lady". At least they are all pretty, too. I wish I could keep her in my pocket so all the times Mike forgets to tell me I'm pretty I can take her out and feel wonderful. She's awesome.

I'm getting a review product in today that I'm super excited for. I can't wait to try it on.....hint, hint....and hopefully wear it to the wedding we have next weekend!! (hint, hint) It was so hard to pick but I think I made a good decision and I can't wait to see what it looks like on me! Stay tuned for the review!!

As is the game of LIFE...

I know, I've been missing lately. I'm very sorry and I think about you guys often. Life has just gotten in the way.

School starting has been a huge hinderance. I got too used to the summer schedule of getting home at 3 and relaxing for a while. Now my "normal" schedule is back and it's taking some getting used to.

Truth is I haven't even really been that busy either. I wish i could say we had so much going on and tell you about all the cool things, but....nope. lol I'm just a slacker.

But I have gotten into a few things...like a whole lotta this...

Recipe: Taco Salad

I've been slacking in the blogging department lately. My bad. But, I'm here today with my new food craving. Taco salads. Mike and I have tacos or burritos about once a week. Lately I have been craving some taco salads and thought of a cool way to do the actual tortilla bowl, so we went for it a few weeks ago. It was delicous!! And Mike was convinced he would never be full by it, and would have to have 2, but he was wrong!! They were so filling, and it's all great stuff to eat, so I figured I would post the recipe.

Taco Salad

INGREDIENTS:
1 lb. extra lean ground beef
1 pkg. low sodium taco seasoning
3-4 burrito sized flour tortillas
shredded cheese
salsa
lettuce
onions
corn
tomatoes
sour cream
and any other toppings of your choice

DIRECTIONS:
Preheat oven to 375ยบ and spray two cereal bowls with nonstick spray. Brown ground beef and season according to package directions. Set aside. Chop up toppings and other ingredients.

Gently push tortillas down into the cereal bowls. You may have to fold some edges to make them fit. If you have a slightly bigger bowl that will work just as well. Place in oven for about 10 minutes or until the edges seem to be crispy. Take tortillas out of the bowl and place bottoms up on rack until bottom gets crispy.



Take bowls out and fill with ingredients.

Date Ideas for Fall



Fall and spring are by far my most favorite times of year. The weather is perfect and there are so many things going on that are fun and fairly inexpensive. And...what better way to participate in those things than with your love bug?!?!

Here are a few of my favorite "date-like" things to do while the weather is perfect and pumpkin beer is in season!!!

// BEERFEST - Tis the season for beer and wine fests all over the place. Use the Beer Advocate app or check out their webpage to find out all the festivities going on around you. It's the perfect time to get a little "drunk in love" with your main squeeze!!

// HAUNTED HOUSE - Of course I'm going to include the Haunted House. Halloween is BY FAR my favorite time of the year and the hubby and I love hitting up all the haunts around our area.

// HORROR MOVIE NIGHT - What better way to celebrate during this time of year then to cuddle up with your man and get scared to death!! It's also SUPER CHEAP!! The Goober and I LOVE horror movies and we always make it a point to share a few nights wrapped around each other with some dranks watching all the classics and a few new ones.

// WINERY or BREWERY -  Wineries offer all kinds of activities during this season. And, while my husband won't go with me to the winery (he thinks it all tastes like rubbing alcohol) your men might be a little more refined. Many wineries have music fests or wine pairing dinners for a small fee. Or just go to a tasting and sample a few of the local wines. If your husband is like mine, make it a girl's day or head to the local brewery and get a few flights!

// BALL GAMES - It's football season!! We all know tickets for football games are a bit expensive, so if you can't afford it, check out your local or former high school or Pop Warner teams. Baseball is still in season, too, and tickets to a baseball game are a little more affordable.

// ZOO - I LOVE the zoo but whenever I'm off in the summer it always seems like it's going to be too hot to go walk around a stinky zoo all day. But, the fall is perfect!! Check out your local events or Beer Advocate for possible Brew at the Zoo opportunities, too!!

// CORN MAZE or PUMPKIN PATCH - Corn mazes are so much fun and can be found all over during the fall. If it were Mike and I I'm sure we would find a way to smuggle in some drinks, but just getting that alone time is good enough. Same thing with a pumpkin patch. Nothing beats getting to actually go and pick your own pumpkin. Mike and I have a competition every year who can carve the best pumpkin to go with the shape and it's a blast.

I love this time of year!!! I admit, however, that it has been super humid over the last few days so Mother Nature better get her 'ish right.

- Tis the season for short sleeves during the day and a sweatshirt or sweater at night!!

- Tis the season for family and friends around the fire pit!!

- Tis the season for camping in the woods and smores in my mouth!!

- Tis the season for homemade chili!!
