Recipe: Sweet Asian Grilled Chicken



We have been in such a funk lately with grilled chicken. Every week we pick up a few of the Mccormick Spice packs and use that as our marinade. And, they're delicious and all, but I'm tired of eating the same thing over and over again.

Sunday, when Mike said we were going to have grilled chicken for dinner....again...I went online to see if I could find anything interesting, and that we didn't have to go to the store for. Luckily, as soon as I went to Pinterest and typed in "grilled chicken" this was the second thing to pop up!

P.S. Mike says..."That's not burnt, it's caramelized."
Sweet Asian Grilled Chicken
2 lbs. chicken
1/2 cup brown sugar
1/2 oil
1/4 cup vinegar
1/4 cup soy sauce

Mix marinade ingredients together. Pour into ziploc baggie with chicken. Refrigerate and let sit at least 4 hours. Preheat grill to medium or high heat. Cook chicken about 5 minutes on each side. Enjoy!

6 FREE APPS every TEACHER must have


This year at my teacher conference I went to a few workshops that were so super interesting. I learned about a ton of new [and some old] apps that are out there that make a teacher's life so much easier. And let's face it, anything that makes a teacher's life easier is a plus in my book. So since there are so many teachers out there in blogland, I figured I would share some of my favorites with you!! And please, if you have anything to add send me a comment!!

{Remind} - If you've heard of Remind 101, you know remind. It's the "new" version. Remind is an app that allows for you to send text messages to your parents without having to use actual phone numbers. And if you're a middle or high school teacher, you can even use it with your kids. And sign up is super simple. Parents or students text a code to a free number, attach a name and BAM! You're done! There is also a new feature where you can chat one to one with another remind member. So maybe you have a student that needs to make up an assignment before a certain date, or a parent who wanted updates on their child? You can use remind to keep them in the loop! I absolutely love this app and hope you can find it useful, too!!




{Homeroom} - If your parents are just as obsessed with Instagram as their teachers, you need to have this one. Homeroom is a mix between Facebook and Instagram. You can create albums and upload pictures right to the homeroom app. And parents can view the images you post immediately. So, can't take many chaperones on that zoo trip you've been planning?? Take pictures throughout the day and post them to your Zoo album! You're also able to post 30 second videos. So if you have an important accomplishment or something exciting to share with the parents, they won't miss out!!




{Plickers} - Plickers is an app that lets you poll your students without any kind of external devices. All you have to do is print a plicker card for each student in your class. Then, after you create questions, you have the students hold up their plicker to show their answers and you scan the room. Plickers will collect all the data and even graph the classes answers for you in live view. My students love it! The love to see how everyone answered as the results come in, and there is no need to feel embarrassed if they got the question wrong. No one will know who answered what unless you want them to.



{Seesaw} - Seesaw is a digital portfolio app that is kid friendly and the perfect way to keep things organized in your classroom. This is perfect for your parent-teacher conferences because you can keep all of your students' projects in one place. Plus, the kids still get to take them home to show their parents. I don't personally use this in my classroom, but I know teachers who let their students do most of the work with this. Keeping an iPad closeby during small group, kids can take pictures of their progress on computer programs or add their voice to video of how to complete math problems. The possibilities are endless.



{ShowMe} - Ever heard this sentence? "Mrs. {insert last name here} I couldn't do my homework last night because I couldn't figure it out and neither could my parents." Well have no fear....ShowMe is here!! ShowMe is a digital whiteboard where you can record your voice and tutorials for your students to access even when they aren't in the classroom. No more problems doing homework. When students use show me they can watch the process step-by-step as you guide them through it. This is also great for small group sessions. Keep an iPad with access to ShowMe closeby so kids can access tutorials and not bother your small group session.





{Class Dojo} - If you haven't already heard of Class Dojo, go check it out. Go ahead....I'll wait. Class Dojo is the number one way to keep your kids on track. You can download the app on your phone and both students and parents can keep track of the progress at their own leisure. Basically students are awarded points for doing the right thing. How easy is that? And Class Dojo has a chat feature so parents can ask about any possible negative points they might see. And you can turn your points into a spreadsheet to use at parent-teacher conferences. You need to start using this immediately (or well...next year, since this one is almost over).

Friday Favorites!!

Happy happy friday!! I seem to be in a good mood today, which is much easier to deal with than the mood I was in yesterday. *smile* 7 more days.......but truthfully they should be 7 super easy days because most of my classes are finished with all of their projects and it's just free time now.

I'm super excited for this weekend. Not because we have anything exciting going on or anything, but it's the weekend. Why wouldn't I be excited? Mike's first race is this weekend, so be prepared for some track-grams and track-snaps if we're snapchat friends. If not, hit me up {leggs532}, and I'll add you. Just make sure you tell me who you are or I'll probably think you're some crazy creeper tryin'a spy on my shit.

And on to my favorites....

favorite cocktail.
This one was hard twss because we had a lot of different options this week. Thursty Thursday is starting to get really exciting for me because we get a lot of friends with a great background in cocktail making and beers. And more and more people are starting to link up. Which is what makes my decision so hard. But, ultimately I chose the one I want to make asap, Honey Strawberry Sangria from Gluten Free Yumms. I love it when I come across a recipe that adds something you never think of. Like honey. I would have never dreamed to add honey to sangria, but I can only imagine how delicious this drink will be. Can't wait to try it.

You need to find a seat. Like for real. Sit down. Because what I'm about to show you is a dish that will bottle your mind. I've found it guys. The dish that will trump all dishes from now on. The dish that was made to change your life. Wait for it.............Skinny. JalapeƱo. Bacon. Mac and Cheese. I'll give you a moment....................................in through the nose, out through the mouth. You good? I mean what in the actual fudgeroni is happening. Did you read the word "skinny"? *sigh* The recipe.

I need a place where I can keep files so everything isn't shoved haphazardly into our spare bedroom closet anymore, but I can't find something I like. Until now. I love how they redid this filing cabinet. Filing cabinets are so industrial looking and ugly. This makes it so gorgeous. I'm even thinking of doing it to my filing cabinet in my classroom. Love!



favorite laundry room inspiration.
We need to do something to make our house look like we live in it. We've been there for almost 2 years now and there is still so much that needs to be done. 5 rooms of our house don't even have pictures on the walls. One of the rooms that I hate going in is our laundry room. I feel like it's just the breeding ground for all things junk. Below is my inspiration. This is essentially our exact laundry room, at least on this side. And, everything here looks pretty easy to me. There's not much to it. So, this summer I'm getting to work. I'm painting, and I'm decorating and I'm making our house look lived in.

#ThurstyThursday: Strawberry Daiqui-Beer


Happy #ThurstyThursday!!

I know a few weeks back I did the Raspberry Beer Cocktail, but I'm doing another one today. Mainly because this one was soooo much better than the other one. Mmmmm. It's kind of along the same lines, but it tastes so yummy!!

The idea actually came to Mike while he was buying me all the ingredients for my other beer cocktail. Unfortunately, since he had already bought the other ingredients, I told him to come on home and we would make it another day. And he proceeded to explain that he was very upset with me that I hadn't thought of this before we bought the other stuff. My bad, Goob.....my bad.

Anywhooos. This is such an awesome cocktail beer ....what do we call these??? Beer cocktail is such a stupid name....any suggestions? I need help. I'm not clever at the moment. But....it's got just the right amount of strawberry flavor but you taste the beer, too. And since it's a bocktail (??? stupid right? Come on and help me!!) it tends to sneak up from behind and kick you right in the ass.

And wait until you see the magic ingredient!! I hope you enjoy!!


Strawberry Daiqui-beer
1 cup fresh strawberries
1/2 cup vodka
3/4 can limeade concentrate, thawed
1 shot strawberry daiquiri mix
3 cold Coronas

Add strawberries to a pitcher and muddle just a little. Then add vodka, limeade concentrate, daiquiri mix, and beer. Stir gently just a little. Pour and enjoy!! Cheers!!

Hastag Humpday!

It's been raining here for the last 2 and a half days. I would really like to complain about it but it's so super relaxing and I love the sound of rain. Plus it means I don't have to water my flowers at all. It's a pain in the ass to drag that hose around to the back part of the house and then drag it back. #thankyouraingods #ifonlyitwasvodka #imonlyhappywhenitrains




We have 9 days left of school!! I've been trying not to count because I feel like it makes the days drag on but subconsciously I do know how many days we have left. I just can't help it. Pray for me that those 9 days go by quickly and without any issues because I might get fired if I have to start drinking in school. #justkidding #maybe #iwouldbesomuchmorefun



Last week one of our little clique told us she was retiring. I guess now we need to welcome in some stranger. Please let it be someone cool. I can't handle someone who's crotchety. I just had a really quick impromptu Scentsy party over the last two weeks and I was hoping to get a few orders just to take me to that $150 mark. Well, we closed last night and SEVEN HUNDRED AND TWENTY FOUR DOLLARS LATER, I got my free stuff total. Chobani #BreakYouMake Project

Do you know someone who needs a break? Someone who needs to take a little time to refresh? Earlier this week I heard about the Chobani Flip #BreakYouMake project and was inspired to write about my #BreakYouMake nomination.

Although he'll never read this, my #BreakYouMake candidate is my brother, Brian. I can't even begin to explain how hard he works day in and day out in order to provide for, not only his own family, but also my mom.



Brian is the father of two of the most adorable kids on the face of this earth, {I know they're my niece and nephew, but they're still the cutest kids ever} and the husband to a hard-working, amazing mother and nurse. He's one of the most generous people I know and will drop everything to help you if you get in a bind. Not only does he work full time at a job that's 45 minutes away from his home, but every second of his free time is spent working on jobs at home or helping others. It seems he never gets a break.

I don't think there is a day that Brian goes without working on something. If he's not at his actual job, he's knees deep in some type of hands-on project. He also helps my mom with a lot of the work around her house and properties that she owns. Cutting grass, fixing things that are broken, and overall just generally maintaining what she can no longer do. A few years ago one of my mom's rental properties was flooded after a pipe burst. Brain basically rebuilt everything on the inside of that house, while he was working full time at a job an hour away. He spent nights, weekends, and days off working on that house in order to get it move-in ready. And it is absolutely gorgeous.


Recently, Brian and his wife bought a gorgeous new house. It's huge with a ton of rooms available for their kids and even my aunt, who comes by to visit every once in a while. And, while the house was pretty much move in ready, it desperately needed a coat of paint. Every room in the house was covered in random streaks of Spackle, left by the previous owners. So...Brian went to work. And now, a little over a month later, they'll be finally moving in.

If I had the funds to, and I thought Brian would actually take the time for himself, I would send his family on vacation. I think they desperately need some time to focus on just themselves. However, we would probably need to hypnotize Brain so he wasn't constantly thinking about what needed to be done at home. His brain needs a break. He needs to take some time to relax and enjoy his family.

He's most definitely my #BreakYouMake candidate.
